Rescue puppy seems to be okay with pooping in properly-sized crate

I have a 4 month old rescue puppy who is getting the concept of house training. We are still figuring out cues but her schedule has been very inconsistent due to worms and giardia. She is turning the corner now after her first round of giardia meds but almost every day there is a rogue poo in the kennel while I'm running an errand which she eats, presumably to clean up. However, I discovered the other day that she was also eating her outside poops voluntarily. So, I am now trying to figure out whether she has decided that it is okay to poop in her close-quarters kennel because she is okay with eating it.

For example, if I have a dinner date at 7 and I feed her at 5, I expect her to poop by 6. Once it hits 6:30 and no poop, I have to put her in the kennel and hope she doesn't shit before 8:30, at least. Often, I come home to the smell but just a poo stain on her bedding. But often enough, she poops within 45 minutes of eating and it's a non-issue. It's difficult to understand what normal would feel like after our starting point was worms and giardia. I'm having a hard time understanding how to manage my schedule to best facilitate her progress. Any advice is welcome. Thanks!
