4 year old neutered dog suddenly humping daily?

Our dog is a street rescue, we've had him 2.5 years and he was believed to be in 18mos-2 year range when we adopted him. It has been a slow road, but he is becoming a great companion. He is a 22 lb cockapoo-ish mix with lots of other Superdog thrown in

One of his major problems has been loud sharp barking at both expected and unexpected times. He has anxiety and we tried fluoxitine for a year but didn't notice much change either going on it or when we weaned him off. I continue to work on his issues daily, and recently his barking in all situations has lessened, and we can often get him to desist with a sterner command. So…winning!

But out of the blue, he has started to hump blankets. Every night, as soon as he has had his dinner, he grabs his own blanket or anything similar and goes at it for an hour or more. It's been more than 2 weeks and I'm concerned this may not be just a phase. Why now? If you've had experience with this please share, thanks
