My adopted girl is unexpectedly high-energy. What more can I do for her?

Hello r/dogs ,

When Black Friday sales roll around, I will buy an Embark testing kit for my girl. She is 2yrs old. Her mix is a mystery and I'm very eager for the results. Her adoption paperwork stated "Lab mix" i.e unknown. I honestly thought she was some type of sighthound mix. She was adopted at 8mos old. After being fed proper calories (underfunded pound forced to house 4+ dogs per kennel, her food was definitely being stolen) growing and gaining muscle, I've since eaten my words. I've been told that she has characteristics of being part Malinois. Oy vey…

There is a breed/owner energy incompatibility, but I am genuinely trying. Medicated ADHD, POTS (fought and finally, recently got a prescription), soon getting tested for sleep apnea. I was vindicated that her energy was truly high when my adolescent coonhound pup is lazy compared to her.

Here's our routine. Mornings is a 45min-1hr walk, allowing most sniffing. I live on an acre property and if we get back w/ enough time, play fetch. I feed breakfast through wobblers, scatter feeding, snuffle mat or at minimum a slow feed bowl. I WFH. She frequently but politely requests more enrichment, which the best I can do is a frozen treat, chew or stuffed Kong until lunch. During lunch break I'll play fetch, frisbee, herding ball or other games for approx 20 minutes. I have to rotate because she gets bored. After work is a 30-45 minute walk, depending on when the sun sets. I live rurally without leash/loose dog laws and routes are limited. We've had a handful of incidents, but she needs the walks. Dinner is fed in a slow feed bowl.

She is a very good girl, my confidant, my ride-or-die. She gets depressed, refusing meals until starving if I am away. Re-homing isn't an option… Her only bad behavior is digging holes on our property. I never punish and am looking into building a dig box to redirect her to.

Point of the post:

My question being, is there anything else I could be adding to further make her happy? I thought about "dog fishing" (furry lure tied to a cheap fishing pole) and investing in an agility course. She will settle if I ask her to, but she does so, so sadly that it gnaws on my heart. Thoughts? Advice?
